Historian and gastronomy enthusiast Patrick Rambourg is part of the team that launched this conference, which would not have taken place had it not been for a fascinating debate with Julia Csergo on the respective and relative importance of Grimod de la Reynière and Brillat-Savarin in the emergence of this exciting discipline.
Bio
Patrick Rambourg is a historian, teacher, and author. He is an associate researcher at the Echelles laboratory (UMR 8264) at Paris Cité University and also teaches at Sciences Po Lille. His research focuses on culinary and food practices, gastronomy, representations of the table and cuisine, the food service industry, and gastronomic Paris. He gives lectures and participates in conferences and round tables. He is also a historical culinary advisor, notably for the film La Passion de Dodin Bouffant by Tran Anh Hung, which won the Best Director Award at the 2023 Cannes Film Festival. He contributes to history journals and has published a large number of writings (articles and books), including Histoire du Paris gastronomique, du Moyen Âge à nos jours (Perrin), which was released in 2023. The same year saw the publication of the second edition of L'Art et la table (Citadelles & Mazenod), the first edition having been published in 2016. His Histoire de la cuisine et de la gastronomie françaises (Perrin/tempus) was published in Chinese and Brazilian Portuguese in 2025.
