

Florent Quellier
What a pleasure it was to discover Florent Quellier's work! He counts among those who understand deeply that gastronomy is above and foremost the construction of an idea built notably on identity. In addition, he has been valuable in helping us bring on board two incredible specialists of Grimod de la Reynière, Yuka Saito and Chikako Hashimoto. We are delighted to have him with us for this conference!
Bio
Florent Quellier is a professor of modern history at the University of Angers (TEMOS laboratory - Time, Worlds, Societies - UMR 9016). He held the CNRS chair in the history of food in the modern world from 2010 to 2015, is co-director of the “Tables des Hommes” collection published by PUFR, and is a member of the scientific council of the European Institute for the History and Cultures of Food (IEHCA). He is a specialist in food cultures and the history of plants. His publications include La table des Français, une histoire culturelle, fin XVe – début XIXe siècle (2007, reprinted in 2013, revised and expanded edition in 2025), Gourmandise, histoire d'un péché capital (2010, reprinted in 2013 and 2024), winner of the 2010 Jean-Trémolière Prize and translated into seven languages, Histoire du jardin potager (2012, reprinted in 2023), Festin, ripailles et bonne chère au Grand Siècle (2015), La civiltà del cibo, Storia culturale dell’alimentazione in Età moderna (2022), and edited a comprehensive Histoire de l’alimentation de la préhistoire à nos jours (History of Food from Prehistory to the Present Day), published in 2021 by Belin, winner of the 2021 Anthony Rowley Prize for History and Gastronomy.
