Grimod, Brillat & Nous
From the heights of a memorable meal, 3,000 years gaze down upon us. It is for this reason—to nurture continuity—that we are organizing the “Grimod, Brillat & Nous” conference on October 2 and 3 in Lyon, where we will compare Grimod de la Reynière with Brillat-Savarin. Because if we do not understand this essential link in our gastronomic heritage, we cannot grasp its essence, and therefore cannot preserve it, much less promote it.
A dozen world renown speakers will present during two days all the intricacies between Grimod and Brillat, giving us insight into the foundations of the "discours", this unique way of talking and thinking about what and how we eat.
