Grimod, one of the founders of Gastronomy, shared his impressions with up to 12 table companions. Sharing is essential as it is thus that our vision of the world takes hold and forges the road to the Sublime Table. Sharing impressions, perceptions, our vision the world lead us to embrace its beauty and complexity.
Pleasure
Though the evanescent subtlety remains the objective, the long road to elevation requires motivation which starts with the pleasure of all senses! As we distinguish love from lust, we strive to distinguish the pleasure of ethereal scents from the urge of fat, salt and sugar. We work to cut ourselves loose from their hold toward pure enlightenment.
Effort
Effort plays a crucial role in gastronomy and the dining experience. It’s not just about the food itself, but the care and attention that goes into each dish. A meal with others becomes a celebration when we invest time and energy into preparation, creating an atmosphere rich in connection and flavor.
Time
Liberation from time is of the essence. Though our mastery of time, starting with the clock, has allowed great improvements, Gastronomy offers us the opportunity to escape from the claws of time. As time is so precious, offering it to this sublime endeavor of Gastronomy can only elevate us.
