Emmanuel Rubin
It is said Grimod de la Reynière was the founder of food critique. How then could we not have one with us at this conference?
I first met Emmanuel early this year for the commemoration of Brillat-Savarin's bicentennial, at the cemetery of Père-Lachaise. Our encounter was brief, at the restaurant after the ceremony, over a red-checkered table nap.
Reading food critiques can be tedious. But when you dive into Emmanuel's books, it's an adventure.
The question is, does he take after Grimod or Brillat more ?
Come to the conference to discover for yourself!
